Grown in the deep, moving water of Batang Ai.
Our fish are raised in Batang Ai, Sarawak, in deep-water aquaculture surrounded by rainforest and clean water. The result is exquisite, sweet and premium-tasting fish.
Each fish is harvested and processed with the same Individually Quick Frozen technology used for salmon and tuna sashimi, so it reaches your kitchen tasting like it was pulled from the lake that morning.

How to store
Three simple steps to the best flavour.
Keep it frozen
Store your fish in the freezer until you are ready to thaw and cook.
Thaw gently
Thaw overnight in the fridge. In a hurry, seal it in a bag and thaw in a container of water, but avoid chlorinated tap water, which can alter the taste.
Rinse, pat dry, cook
Rinse and pat dry before marinating or seasoning, then cook it any way you like.
